“ This apple pie is everything that you could possibly want in an apple pie - I think a lot of it has to do with balance. The double crust is shatteringly crisp and neat, sturdy enough to hold all the filling but somehow still tender and flaky. I've seen a lot of decorative pie crusts before baking, but it's rare that one looks this gorgeous after baking. The filling is everything I love about fall - heavily perfumed with cinnamon and warm spices and gooey filling (no runniness at all!) all the way to the top crust. The apples similarly find that perfect balance between structural integrity and tenderness - juicy yet firm and somehow avoiding that dreaded applesauce consistency that you find in so many pies. My only objection is that I had to share (if you're snagging one of these for a family event, maybe grab a second one and hide it for later). ”
